Our bagels are cold-proofed overnight, then boiled and baked on burlap-lined wooden boards in a revolving tray oven. They are dense but soft. They are chewy but with a slightly crunchy crust. Most importantly, they are always freshly baked at our shop the morning you buy them.
Fantastic bagels — but also, quite possibly the best lox and smoked salmon you can find.
Unlike most bagel shops, we cure and smoke our salmon in-house with real cherrywood smoke and no artificial additives. We slice it each morning and then wrap it in butcher paper for the freshest lox you can find in San Francisco. You’ll immediately notice the quality and texture of our lox compared to the mushy stuff sold in vacuum-sealed plastic packaging.
